Grease traps are a part of each kitchen's infrastructure. They are designed to prevent grease & oil from entering a restaurant's sewer or septic system.
Here is how a grease trap system works:
- Drains are placed in the floor between the dishwasher and the sink. They carry the grease and oil to the grease trap system.
- The wastewater flows into either an interior or exterior grease trap system. A baffle covers
the inlet and outlet of the traps, preventing the grease from exiting the trap.
- The grease and oil separate and float to the top of the
grease trap.
- The clean water then continues to flow into your
sewer or septic system.
The WRE Protection Program is a guide to proper grease trap
maintenance. If followed, our program will keep your system healthy and functioning without disruption to your business.
Proper system maintenance prevents you from ever
experiencing back-ups, blockages, odor, disruption of kitchen
service, and, worse case scenario, a facility shutdown. All of
these could potentially damage your system and your business.
